Quick & Easy Pork and Beans Soup

Ingredients List:
- 1/2 lb. pork (any cut)
- 1 onion
- 2 garlic cloves
- 1 tbsp. roasted red pepper paste
- 1 can red kidney beans
- 1-1/2 cups crushed tomatoes
- 6 cups water
- 1/2 orzo
- 1/2 tsp. dried Greek oregano
- 1 tsp. fennel seeds
- 1 tsp. dried rosemary
- 1/4 cup Greek extra virgin olive oil
- Salt & pepper to taste

Method:
- Cut pork into small 1/2" pieces and brown in olive oil
- Add fennel and rosemary and cook for another 3 minutes
- Remove pork from pot and set aside
- Slice onions and saute in the same pot as the pork
- Add crushed garlic and cook for 3 more minutes
- add red pepper paste and cook for 3 minutes
- Add beans, crushed tomatoes and water
- Once the pot has come to a boil, add the browned pork, orzo & oregano
- Reduce heat, cover and simmer about 30 minutes

Notes & Tips:
- Makes 4-6 servings
- Add chili flakes for optional added spice
- Garnish with Greek yogurt or sour cream
