Quick & Easy Pork and Beans Soup

pork & beans soup

  Ingredients List:

  • 1/2 lb. pork (any cut)
  • 1 onion
  • 2 garlic cloves
  • 1 tbsp. roasted red pepper paste
  • 1 can red kidney beans
  • 1-1/2 cups crushed tomatoes
  • 6 cups water
  • 1/2 orzo
  • 1/2 tsp. dried Greek oregano
  • 1 tsp.  fennel seeds
  • 1 tsp. dried rosemary
  • 1/4 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Cut pork into small 1/2" pieces and brown in olive oil
  2. Add fennel and rosemary and cook for another 3 minutes
  3. Remove pork from pot and set aside
  4. Slice onions and saute in the same pot as the pork
  5. Add crushed garlic and cook for 3 more minutes
  6. add red pepper paste and cook for 3 minutes
  7. Add beans, crushed tomatoes and water
  8. Once the pot has come to a boil, add the browned pork, orzo & oregano
  9. Reduce heat, cover and simmer about 30 minutes

 

Notes & Tips:
  • Makes 4-6 servings
  • Add chili flakes for optional added spice
  • Garnish with Greek yogurt or sour cream
