Rice and Orzo with Jumbo Shrimp

  Ingredients List:

  • 1/2 lb. jumbo shrimp
  • 1/4 cup Greek extra virgin olive oil
  • 1 onion
  • 1 garlic clove
  • 1/2 tsp. cumin
  • 1 bay leaf
  • 1 cup rice
  • 1/2 cup orzo
  • 1 can condensed tomato soup
  • 3-4 cups water
  • 1 cup frozen peas
  • 1 clove
  • Salt & pepper to taste
 

Method:

  1. Chop onion and in a medium sauce pan saute in olive oil
  2. Mince garlic and add to onions along with cumin and bay leaf and saute for 3 minutes
  3. Add rice and orzo and saute for 3 more minutes
  4. Add condensed tomato soup, water, peas and clove.
  5. Stir, bring to a boil, reduce heat, cover and simmer until rice is almost done
  6. Stir in shrimp, stir and cook for about 5 minutes

 

Notes & Tips:
  • Makes 4-6 servings
  • Can be served as a main or side
  • Garnish with mizithra, kefalotyri or parmesan cheese
  • Omit shrimp for vegan option
