Roast Pork & Potatoes From Kefalonia

  Ingredients List:

  • 4 lbs. pork shoulder
  • 2 lbs. potatoes
  • 4-6 carrots
  • 4 garlic cloves
  • 1/3 cup Greek extra virgin olive oil
  • 1 tbsp. dried rosemary
  • 1 tbsp. paprika
  • 1 cup Greek dry white wine
  • 1 cup water
  • Juice of 1 lemon
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 400*f/200*c
  2. Place pork in roasting pan
  3. Peel & half potatoes and place around pork in pan
  4. Chop carrots and place in pan as well
  5. Place unpeeled garlic around pan
  6. Drizzle with olive oil
  7. Sprinkle rosemary and paprika throughout pan
  8. Add wine and water to pan
  9. Squeeze the lemon juice over pan
  10. Cover and roast for 2 hours @ 400*f

 

Notes & Tips:
  • Makes 4-6 servings
  • For added colour, roast the last 15 minutes uncovered
  • Serve with feta cheese and Greek salad
