Ingredients List:
- 4 beets
- 1 whole head of garlic
- 1/4 cup Greek extra virgin olive oil
- 2 cups strained Greek yogurt
- 1 tsp. red wine vinegar
- Salt & pepper to taste

Method:
- Pre-heat oven to 400*f/200*c
- Peel and place beets in aluminum foil
- Cut off top of garlic head and nestle in beets
- Drizzle with olive oil and season to taste
- Close foil tightly and roast for 1 hour
- In a food processor add beets, peeled roasted garlic, olive oil, yogurt & vinegar
- Process to combine well
