Greek Roasted Leg of Lamb with Potatoes
Ingredients List:
- Leg of lamb (bone-in)
- 4-6 large potatoes
- 1/3 cup Greek extra virgin olive oil
- 8-12 cloves garlic
- 2 lemons
- Thyme
- Rosemary
- Salt & pepper to taste
- Pre-heat oven to 400*f / 200*c
- Cut potatoes into pieces or wedges and place in roasting pan
- Drizzle potatoes with half of the olive oil and season
- Add half the garlic to potatoes
- Squeeze the juice of one lemon onto potatoes
- Add half the thyme and rosemary in potatoes and mix well
- Place leg of lamb over potatoes and season to taste on both sides
- Add remaining garlic, rosemary and thyme over lamb
- Squeeze the juice of the second lemon along with the remaining olive oil
- Roast uncovered for approx. 1-1/2 to 2 hours @ 400*
Notes & Tips:
- Leave squeezed lemons in pan for added aroma during roasting
- Serve with a side salad or veggies
- Makes 6-8 portions
