Greek Roasted Leg of Lamb with Potatoes

Ingredients List:

  • Leg of lamb (bone-in)
  • 4-6 large potatoes
  • 1/3 cup Greek extra virgin olive oil
  • 8-12 cloves garlic
  • 2 lemons
  • Thyme
  • Rosemary
  • Salt & pepper to taste

Method:

  1. Pre-heat oven to 400*f / 200*c
  2. Cut potatoes into pieces or wedges and place in roasting pan
  3. Drizzle potatoes with half of the olive oil and season
  4. Add half the garlic to potatoes
  5. Squeeze the juice of one lemon onto potatoes
  6. Add half the thyme and rosemary in potatoes and mix well
  7. Place leg of lamb over potatoes and season to taste on both sides
  8. Add remaining garlic, rosemary and thyme over lamb
  9. Squeeze the juice of the second lemon along with the remaining olive oil
  10. Roast uncovered for approx. 1-1/2 to 2 hours @ 400*

  • Leave squeezed lemons in pan for added aroma during roasting
  • Serve with a side salad or veggies
