Salmon Saganaki

salmon saganaki

  Ingredients List:

  • Salmon steaks
  • 1 garlic clove
  • 1 onion
  • Bunch of parsley
  • Bunch of dill
  • Chili flakes (optional)
  • 1/4 cup ouzo
  • 2 ripe tomatoes
  • 80g feta cheese
  • 1/4 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 400*f/200*c
  2. Slice onion & garlic and in a skillet saute in olive oil
  3. Chop tomatoes & herbs and add to pan
  4. Cook for 3 minutes
  5. Add ouzo and cook for another 3 minutes
  6. Add salmon steaks to pan and cover with tomato mixture
  7. Crumble feta over pan and bake for 7-10 minutes (20 if you're Greek)

 

Notes & Tips:
  • Makes 4 portions
  • Serve immediately
  • Add chili flakes for added spice
  • Substitute fennel (seeds) for ouzo
  • Serve with bread and salad
