  Ingredients List:



  1. Cut up sausages into bite sized pieces and in a large pot brown in olive oil
  2. Slice onion, add to pan and saute until soft
  3. Add broad beans to pot and cook for about 3 minutes
  4. Add rosemary and oregano and continue to cook for another 2 minutes
  5. Chop eggplant into bite size pieces and add to pot
  6. Add spinach, crushed tomatoes & water and simmer partially covered for 15-20 minutes


Notes & Tips:
  • Makes 4-6 servings
  • Serve with feta cheese and fresh bread
  • Spinach can be substituted for green of your choice
  • Omit sausage for vegan option
  • Recipe can be halved, doubled or tripled
  • Can easily be frozen
