Sausage & Broad Bean Stew | Greek Koukia Recipe

Method:
- Cut up sausages into bite sized pieces and in a large pot brown in olive oil
- Slice onion, add to pan and saute until soft
- Add broad beans to pot and cook for about 3 minutes
- Add rosemary and oregano and continue to cook for another 2 minutes
- Chop eggplant into bite size pieces and add to pot
- Add spinach, crushed tomatoes & water and simmer partially covered for 15-20 minutes

Notes & Tips:
- Makes 4-6 servings
- Serve with feta cheese and fresh bread
- Spinach can be substituted for green of your choice
- Omit sausage for vegan option
- Recipe can be halved, doubled or tripled
- Can easily be frozen
