Sausage & Spinach Pasta

  Ingredients List:

  • 2 Greek sausages
  • 1/4 cup Greek extra virgin olive oil
  • 1 leek
  • 2 garlic cloves
  • 300g short pasta
  • 1 tsp. dried rosemary
  • 300g spinach
  • 1/8 tsp. nutmeg
  • 40g Greek kasseri cheese
  • Salt & pepper to taste
 

Method:

  1. Cook pasta until slightly underdone
  2. Chop sausages into 1/2" pieces and brown in olive oil
  3. Chop leek and add to browning sausage
  4. Saute for 5 minutes
  5. Add rosemary and spinach and cook until spinach has wilted
  6. Grate nutmeg into spinach and stir well
  7. Add cooked pasta to sausage and spinach and mix well
  8. Grate kasseri over pasta and serve 

 

Notes & Tips:
  • Makes 2 servings
  • Recipe can be doubled, tripled....
  • Use any sharp melting cheese instead of kasseri 
  • Chili flakes for extra spice optional
  • Reserve a little pasta water to loosen sauce
