Ingredients List:
- 2 Greek sausages
- 1/4 cup Greek extra virgin olive oil
- 1 leek
- 2 garlic cloves
- 300g short pasta
- 1 tsp. dried rosemary
- 300g spinach
- 1/8 tsp. nutmeg
- 40g Greek kasseri cheese
- Salt & pepper to taste

Method:
- Cook pasta until slightly underdone
- Chop sausages into 1/2" pieces and brown in olive oil
- Chop leek and add to browning sausage
- Saute for 5 minutes
- Add rosemary and spinach and cook until spinach has wilted
- Grate nutmeg into spinach and stir well
- Add cooked pasta to sausage and spinach and mix well
- Grate kasseri over pasta and serve
