Penne with Sausage & Sun Dried Tomatoes

  Ingredients List:

  • 1 lb. Greek pork sausage
  • 450g penne pasta
  • 1/3 cup sun dried tomatoes
  • 2 garlic cloves
  • 2 cups chopped kale
  • Bunch of parsley
  • 80g feta cheese
  • 1/4 cup Kalamata olives
  • 1/3 cup Greek extra virgin olive oil
  • 40g mizithra cheese
  • Salt & pepper to taste
 

Method:

  1. Cook pasta to desired doneness
  2. Remove casings from sausage and in a large pan  brown in olive oil
  3. Mince and add garlic and cook for 2 minutes
  4. Chop kale and add to pan
  5. Add olives, feta and sun dried tomatoes and cook for 5 minutes
  6. Chop and add parsley
  7. Drain pasta and add to pan and mix well
  8. Grate mizithra over mixed pasta and serve

 

Notes & Tips:
  • Makes 4 servings
  • Substitute mizithra cheese for similar cheeses
  • Recipe can be halved or doubled
  • Can easily be frozen
