Shrimp & Chickpea Saganaki

  Ingredients List:

  • 1 lb. jumbo shrimp
  • 1 garlic clove
  • 1/2 tsp cinnamon
  • 1 onion
  • 1-1/2 cups crushed tomatoes
  • 1 cup water
  • 1 can chickpeas
  • Bunch of parsley
  • 100g feta cheese
  • 4 tbsp. Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 450*f/220*c
  2. Slice onion and chop garlic
  3. In a large sauce pan, saute onion and garlic
  4. Add cinnamon and cook for 3 minutes
  5. Add crushed tomatoes, water and parsley and continue to cook for 5-6 more minutes
  6. Add chickpeas to pan and heat through
  7. Place shrimp on top of sauce and crumble feta over shrimp
  8. Bake at 450*f for 6-8 minutes or until shrimp is cooked

 

Notes & Tips:
  • Serve immediately
  • Makes 4-6 servings
  • Serve with fresh Greek bread, rice or salad
  • Extra feta can be added after baking
