Shrimp & Chickpea Saganaki

Ingredients List:
- 1 lb. jumbo shrimp
- 1 garlic clove
- 1/2 tsp cinnamon
- 1 onion
- 1-1/2 cups crushed tomatoes
- 1 cup water
- 1 can chickpeas
- Bunch of parsley
- 100g feta cheese
- 4 tbsp. Greek extra virgin olive oil
- Salt & pepper to taste

Method:
- Pre-heat oven to 450*f/220*c
- Slice onion and chop garlic
- In a large sauce pan, saute onion and garlic
- Add cinnamon and cook for 3 minutes
- Add crushed tomatoes, water and parsley and continue to cook for 5-6 more minutes
- Add chickpeas to pan and heat through
- Place shrimp on top of sauce and crumble feta over shrimp
- Bake at 450*f for 6-8 minutes or until shrimp is cooked

Notes & Tips:
- Serve immediately
- Makes 4-6 servings
- Serve with fresh Greek bread, rice or salad
- Extra feta can be added after baking
