Slow Braised Greek Lamb With Thick Cut Fries

  Ingredients List:

  • 2 lbs. lamb
  • 2 onions
  • 1 garlic clove
  • 1/2 tsp. cinnamon
  • 2 cups crushed tomatoes
  • Vegetable oil for frying
  • 4 potatoes
  • 3/4 cup Greek extra virgin olive oil
  • Water as needed
  • Mizithra cheese and oregano for garnish
  • Salt & pepper to taste
 

Method:

  1. In a large pot brown lamb with 1/4 cup olive oil and season
  2. Once lamb has browned, remove from pot and chop and saute onions
  3. After 5 minutes chop and add the garlic
  4. Saute for 3 minutes and add the cinnamon
  5. After 3 minutes add the crushed tomatoes to the pot and place lamb in sauce
  6. Add enough water to just cover the lamb
  7. Bring to a boil, reduce heat, cover and simmer for 1-1/2 hours
  8. In a large frying pan heat veg. oil + 1/2 cup olive oil
  9. Cut potatoes into very thick fries
  10. Fry cut potatoes to desired doneness
  11. Plate the fries, season, sprinkle with oregano and top with braised lamb and sauce
  12. Garnish with mizithra and serve

 

Notes & Tips:
  • Makes 4-6 servings
  • Can also be served with rice or pasta
  • Serve with a Greek horiatiki salad
  • Mizithra can be substituted for cheese of choice
