Slow Cooked Greek-Style Marinated Ribs

Greek Marinated Ribs

  Ingredients List:

  • 2 full racks pork side ribs
  • 1/3 cup Greek extra virgin olive oil
  • 1 tbsp. dried Greek oregano
  • 1 tsp. paprika
  • 2 lemons
  • 2 cloves garlic
  • Salt & pepper to taste

Method:

  1. Pre-heat oven to 225*f / 115*c
  2. In a medium bowl, combine olive oil, oregano, paprika, garlic and the juice of 1 lemon
  3. Mix well with a whisk
  4. Place ribs on flat baking sheet and lightly baste ribs starting with the underside
  5. Turn ribs over, meaty side up to finish basting
  6. Cook ribs for 3 hours
  7. Re-apply remaining marinade and continue cooking for 1 more hour
  8. Immediately squeeze the juice of remaining lemon over hot ribs once out of the oven
