Slow Cooked Greek-Style Marinated Ribs

Ingredients List:
- 2 full racks pork side ribs
- 1/3 cup Greek extra virgin olive oil
- 1 tbsp. dried Greek oregano
- 1 tsp. paprika
- 2 lemons
- 2 cloves garlic
- Salt & pepper to taste

Method:
- Pre-heat oven to 225*f / 115*c
- In a medium bowl, combine olive oil, oregano, paprika, garlic and the juice of 1 lemon
- Mix well with a whisk
- Place ribs on flat baking sheet and lightly baste ribs starting with the underside
- Turn ribs over, meaty side up to finish basting
- Cook ribs for 3 hours
- Re-apply remaining marinade and continue cooking for 1 more hour
- Immediately squeeze the juice of remaining lemon over hot ribs once out of the oven
