Small Loaf Greek Bread

Method:

  1. In a cup add yeast, sugar and water and stir well
  2. Let yeast mixture stand for 5 minutes
  3. In a mixer or bowl, mix flour and salt
  4. Add yeast mixture to flour and mix well. Dough will be ready when it doesn't stick to the sides of the bowl
  5. Lightly flour working surface and knead  dough for approx. 3 minutes
  6. Place kneaded dough in a bowl, cover with cling wrap and allow to rise for 2 hours
  7. Once dough was doubled in size, knead again for 2 minutes
  8. Pre-heat oven to the LOWEST setting
  9. Form dough into shape of bread you like and place in oven to rest
  10. Immediately turn off oven and allow to rest for 30-45 minutes in warm oven
  11. Once dough is out of the oven and finished resting, pre-heat oven to 375*f/180*c
  12. Baste dough with water and sprinkle with sesame seeds
  13. Bake bread for 45 minutes in middle rack

 

Notes & Tips:
  • Add about 1/4 cup of flour to recipe for kneading
  • Freezes well after baking
