Soutzoukakia with Potatoes Yiahni

Method:
- Pre-heat oven to 450*f/220*c
- Place ground beef in a large mixing bowl and set aside
- In a food processor, combine 2 onions, mint, 4 cloves garlic and dice
- Add mixture and eggs to ground beef, season and mix well
- Form into oblong shaped meatballs and place onto parchment paper lined tray
- Bake meatballs for 30 minutes @ 450*f
- While meatballs are baking, in a large pot chop onion and remaining garlic and saute in olive oil until translucent
- Add the cumin, cinnamon and bayleaves and continue to cook for 3 minutes on med-high heat
- Add crushed tomatoes and water and stir well
- Peel and half potatoes and add to sauce
- Once soutzoukakia are done and have been removed from oven, REDUCE oven temp. to 400*f/200*c
- Add the baked soutzoukakia into the pot, stir well and sprinkle with oregano
- Cover pot and bake for 1 hour

Notes & Tips:
- Makes 6-8 servings
- Quarter potatoes if they are large
- Serve with feta cheese and/or salad
- Perfect as a make-ahead meal
