Spaghetti and Clams In Ouzo Sauce

Ingredients List:
- 450g #5 spaghetti
- 2 tbsp. butter
- 2 garlic cloves
- 1 lb. clams
- 1/2 cup ouzo
- Bunch of parsley
- 1/4 cup Greek extra virgin olive oil
- Kefalotyri as required
- Salt & pepper to taste

Method:
- Cook spaghetti to desired doneness
- In a large sauce pan, add olive oil and butter and saute chopped garlic
- Add the clams and cook for about 3 minutes
- Add ouzo and cook for another 3 minutes to burn off alcohol
- Chop parsley and add to pan stirring well
- Add spaghetti to pan with clams and mix well
- Sprinkle with grated kefalotyri and serve

Notes & Tips:
- Makes 4 servings
- Use any pasta you have on hand
- In the tragic event you can't find kefalotyri, use any hard sharp cheese available
