Spinach, Feta & Smoked Salmon Tarts

Ingredients List:
- 12 tart shells
- 300g frozen spinach
- 3 green onions
- Bunch of parsley
- Bunch of mint
- 150g feta cheese
- 150g smoked salmon
- 4 tbsp. Greek extra virgin olive oil
- 1/16 tsp. nutmeg
- Salt & pepper to taste

Method:
- Pre-heat oven to 375*f/180*c
- Finely chop onion, parsley and mint and saute in a saucepan for 4-5 minutes
- Add nutmeg & stir well
- Fill each tart shell 3/4 full with spinach mixture
- Place smoked salmon over spinach in tart
- Cover each tart with feta
- Bake at 375*f for 25-35 minutes or until feta cheese on top has melted

- Makes 12 tarts
- Substitute feta for your cheese of choice
- Can be frozen
