Spinach, Feta & Smoked Salmon Tarts

  Ingredients List:

  • 12 tart shells
  • 300g frozen spinach
  • 3 green onions
  • Bunch of parsley
  • Bunch of mint
  • 150g feta cheese
  • 150g smoked salmon
  • 4 tbsp.  Greek extra virgin olive oil
  • 1/16 tsp. nutmeg
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 375*f/180*c
  2. Finely chop onion, parsley and mint and saute in a saucepan for 4-5 minutes
  3. Add nutmeg & stir well
  4. Fill each tart shell 3/4 full with spinach mixture
  5. Place smoked salmon over spinach in tart
  6. Cover each tart with feta
  7. Bake at 375*f for 25-35 minutes or until feta cheese on top has melted 

 

Notes & Tips:
  • Makes 12 tarts
  • Substitute feta for your cheese of choice
  • Can be frozen
