Strawberry Custard Cake

  Ingredients List:

  • 1-1/2 cups chocolate chip cookies
  • 1/3 cup melted butter
  • 1 cup sugar
  • 6 eggs
  • 1 tsp. vanilla extract
  • 1 orange
  • 1-1/2 cups fine semolina
  • 8 cups milk
  • 2 cups strawberry jam
 

Method:

  1. Crush cookies and mix together with melted butter
  2. In a 9"/10" springform pan, evenly spread the crumbled cookie mixture evenly on the bottom and pack down
  3. In a large mixing bowl, add sugar &  eggs and beat well until completely mixed
  4. To the custard, the vanilla, the juice & zest of the orange and continue mixing until combined
  5. Slowly add the semolina and the milk
  6. Mix for another 2 minutes
  7. Pre-heat oven to 350*f/160*c
  8. Pour custard into large pot and over med-high heat on the stove top, heat custard through until thickened (about 15-20 minutes)
  9. Pour thickened custard into spring form pan and bake for about 45-60 minutes
  10. Allow cake to completely cool before adding the strawberry jam on top

 

Notes & Tips:
  • Makes 10-12 pieces
  • Allow cake to completely cool before topping
  • Strawberry jam can be substituted with any fruit of choice
  • Can be frozen (allow 2 hours to thaw before serving)
