Stuffed Pork Roast

  Ingredients List:

  • 5 lbs. pork loin
  • Bunch of parsley
  • Bunch of dill
  • 2 onions
  • 1 red bell pepper
  • Chili flakes (optional)
  • 6 garlic cloves
  • 1 tbsp. dried rosemary
  • 80g feta cheese
  • 1 tbsp. dried Greek oregano
  • 1/4 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 400*f/200*c
  2. Butterfly pork into 1" thickness
  3. In a food processor, add parsley, dill, rosemary, red pepper, garlic, onions and olive oil
  4. Blend to a coarse puree
  5. Spread evenly onto pork
  6. Crumble feta over pork and roll tightly
  7. Place stuffed pork seam side down onto a roasting pan
  8. Season, drizzle with a little more olive oil and roast for 1-1/2 to 2 hours uncovered

 

Notes & Tips:
  • Makes 6-8 servings
  • Allow to rest 20 minutes before serving
  • Serve with lemon roast potatoes and Greek salad
