Tigania From Trikala | One Pan Greek-Style Skillet Hash

  Ingredients List:

  • 1 lb. Trikalino sausage
  • 1/4 cup Greek extra virgin olive oil
  • 1 onion
  • 1 green pepper
  • 2 potatoes
  • 1 tbsp. dried rosemary
  • 1 tbsp. paprika
  • 1 tomato
  • 100g gouda cheese
  • Eggs
  • Salt & pepper to taste
 

Method:

  1. Pre-boil or microwave cook potatoes
  2. Slice sausage and in a large skillet brown in olive oil
  3. Chop onion and pepper, add to pan and saute for 5 minutes
  4. Slice potatoes and add to pan
  5. Stir and cook for another 5 minutes
  6. Add rosemary, paprika and chopped tomato
  7. Cover and cook for 5 minutes
  8. Cube cheese and add over sausage mixture
  9. Cover and cook until cheese has melted
  10. Stir one last time before adding the eggs
  11. Crack eggs over sausage & cheese mixture, cover and cook until eggs are done

 

Notes & Tips:
  • Makes 4 servings
  • Substitute any smoked pork sausage if Trikalino sausage is unavailable
  • Use any kind of melting cheese
  • Keep heat on med-low to prevent bottom burning
