Traditional Garlic Macaroni from Santorini

Ingredients List:
- Macaroni as needed
- 1/2 cup Greek extra virgin olive oil
- 4 garlic cloves
- 1 tsp. dried rosemary
- 12oz can diced tomatoes or 4 ripe tomatoes
- 6oz water
- 30-40g Greek mizithra cheese
- Salt & pepper to taste

Method:
- Boil pasta in salted water to desired doneness
- In a large saucepan, saute garlic for 3 minutes watching not to burn it
- Add dried rosemary and continue to saute for 3 more minutes
- Add tomatoes and water stirring well
- Cook until sauce has thickened slightly
- Layer 1/3 of the sauce onto platter
- Pour pasta over sauce in platter
- Pour remaining sauce over the perimeter of the pasta on the platter (see video)
- Grate mizithra over pasta

Notes & Tips:
- Makes 4 servings
- Omit cheese for vegan option
- In the tragic event you don't have mizithra, use parmesan, pecorino or any other sharp cheese
- Use any short pasta you have
