Trahanosoupa With Beef & Vegetables

  Ingredients List:

  • 1 lb. beef sirloin
  • 1 onion
  • 1/4 cup Greek extra virgin olive oil
  • 1 garlic clove
  • 1 tbsp. tomato paste
  • 1 cup mixed veggies
  • 1 cup sour trahana
  • 4 cups water
  • Salt & pepper to taste
 

Method:

  1. Cut up beef into bite sized pieces
  2. In a large pot brown beef in olive oil
  3. Chop onion and garlic and add to pot
  4. Saute for about 5 minutes
  5. Add tomato paste and veggies and continue to cook for another 5 minutes
  6. Add trahana and water to pot
  7. Stir well
  8. Bring to a boil, reduce heat, cover and simmer for 20 minutes or until trahana is cooked

 

Notes & Tips:
  • Makes 6-8 servings
  • Can easily be frozen
  • Garnish with mizithra cheese and/or parsley
