Bean & Spinach Stew

bean & spinach stew

  Ingredients List:

  • 1 onion
  • 1/2 tsp. dried Greek oregano
  • 2 garlic cloves
  • Chili flakes (optional)
  • 1/2 tsp. cumin
  • 1 tsp. dried rosemary
  • 1 eggplant
  • 300g spinach
  • 1 can white kidney beans
  • 1/2 cup crushed tomatoes
  • 4 cups water
  • 1/3 cup Greek extra virgin olive oil
  • Salt & pepper to taste
 

Method:

  1. In a large pot, chop onion & garlic and saute in olive oil
  2. Add cumin, rosemary and oregano and continue cooking for 3 minutes
  3. Chop eggplant into 1/2" pieces and add to pot along with spinach, beans, crushed tomatoes and water
  4. Bring to a boil, reduce heat and simmer covered for 25 minutes

 

Notes & Tips:
  • Makes 4-6 servings
  • Add chili flakes for added heat
  • Season towards the end of cooking. Beans come out softer
  • Can easily be made ahead and frozen
