Vlitopita | Greek Amaranth Pita Pie | Vegetarian Recipe

  Ingredients List:

  • 1 lb. amaranth greens
  • 1 onion
  • Bunch of fresh dill
  • 1 tbsp. dried mint
  • 200g feta cheese
  • 1 egg
  • 1/8 tsp. nutmeg
  • 1/4 cup Greek extra virgin olive oil
  • 2 puff pastry sheets
  • Salt & pepper to taste
  • Sesame seeds for garnish
 

Method:

  1. Chop & cook amaranth in salted boiling water for 15 minutes and DRAIN VERY WELL
  2. Pre-heat oven to 400*f/200*c
  3. In a food processor, combine onion, dill and mint and puree
  4. In a large mixing bowl combine pureed herb mixture with egg, feta & nutmeg and mix well
  5. Add cooked amaranth and mix well
  6. In a cookie sheet or other shallow pan, place 1 sheet of puff pastry on the bottom
  7. Pour and spread filling over puff pastry and spread for even distribution
  8. Drizzle with a little Greek olive oil and place 2nd sheet of puff pastry over filling
  9. Crimp or twist edges to seal (see video) and bake @ 400*f for 25-35 minutes or until golden brown and flakey 

 

Notes & Tips:
  • Makes 12-15 pieces
  • Cooked amaranth greens must be completely drained
  • Can be frozen before or after baking
  • Serve as an appetizer or vegetarian main with a side salad
