"What's In My Pantry" Chicken Bake

Easy Chicken Bake

  Ingredients List:

  • 6 chicken thighs (bone-in, skin on)
  • 1 eggplant
  • 2 cups Brussels sprouts
  • 2 cups green beans
  • 2 carrots
  • 1 onion
  • 1 lb. potatoes
  • 1/2 cup Greek extra virgin olive oil
  • 2 garlic cloves
  • 1 tsp. cumin
  • 1-1/2 tbsp. dried rosemary
  • 1-1/2 cups crushed tomatoes
  • 1-1/2 cups water
  • 1 tbsp. dried Greek oregano
 

Method:

  1. Pre-heat oven to 375*f / 180*c
  2. Chop eggplant, carrots, onion & potatoes and place in 12"x15" roasting pan
  3. Add garlic, green beans, cumin and rosemary to pan
  4. Drizzle with olive oil, season to taste and mix well
  5. Place chicken thighs on top of veggies
  6. Mix crushed tomatoes, water and oregano and drizzle over chicken
  7. Bake uncovered @ 375* for 1 hour and 20 minutes
