Whiskey & Mushroom Braised Porkchops

  Ingredients List:

  • Porkchops
  • 1/4 cup Greek extra virgin olive oil
  • 1 onion
  • 2 garlic cloves
  • 1 tbsp. dried rosemary
  • Chili flakes (optional)
  • 1 bay leaf
  • 1 cup chopped roasted red peppers
  • 1/4 cup whisky
  • 1 19 0z. can chickpeas
  • 1 can condensed cream of mushroom soup
  • 1 can water from soup
  • Salt & pepper to taste
 

Method:

  1. Pre-heat oven to 425*f/220*c
  2. Season porkchops and sprinkle with rosemary
  3. Brown chops in olive oil and set aside
  4. Slice onions and garlic and saute
  5. Add bay leaf, red peppers and whisky and cook for 3 minutes until alcohol burns off
  6. Add chickpeas, soup and water and cook for 5 more  minutes
  7. Add porkchops back into pan submerging in the mushroom sauce
  8. Place pan in oven and bake uncovered for 25-35 minutes

 

Notes & Tips:
  • Makes 4 servings
  • Serve with Greek salad, potatoes or rice
  • Add chili flakes or sriracha sauce for extra spice
  • Great make-ahead recipe
  • Any cut of pork will do
