White Wine Roasted Lamb & Potatoes

Method:
- Pre-heat oven to 400*f/200*c
- Cut potatoes into quarters and place in roasting pan
- Season to taste and add olive oil, wine, water and oregano
- Place lamb in pan and mix lamb and potatoes until evenly coated
- Roast uncovered for 1-1/2 to 2 hours

Notes & Tips:
- Makes 4-6 servings
- Turn lamb over once about half way through cooking
- Serve with Greek horiatiki salad, feta and crusty bread
- Apple juice or more water can be substituted for the wine
